Allergen Handling

Electronic Allergen information

With Custom Adaptive, allergen handling is designed into our menu management system. This means it is available to your staff when they need it, helping you comply with the Allergen Laws that came in to effect in December 2014.
This affects anywhere where food is sold, including restaurants, takeaways, delivery, cafes, and supermarkets.
Around 2% of people in the UK have a food allergy, but around 30% have some sort of food intolerance (source NHS website, February 2014)

What are the 14 Allergens you need to let your customers know about

Every dish on your menu or item in your counters requires the allergen information to be available.
  • You can no longer state that you don't know if an allergen is present
  • You can no longer state that anything may contain anything
  • Oral statements may not be sufficient
  • Staff need to be aware of the implications

Where to put the allergen information

    Pre-packaged foods
    • This must be as an ingredient list on the packaging
    Non Pre-packaged foods
    • This must be available in an obvious place. This can be menu, chalkboard, electronic sign, interactive terminal, or as an information pack (with something to indicate that the information pack exists).
    Site Labeling
    • Somewhere in your restaurant / Cafe must be a sign stating how to find any allergy information. This can be on your menu, or on a wall. To help you - we have downloadable version.

    How to write them

As a full list of ingredients, with any allergens indicated with each ingredient in an obvious way. You can no longer just list the alergens.
The allergens are typically given in bold or red, in brackets after any ingredient that includes it. E.g. "Flour (Gluten)" or highlighted in the name to save space "Egg yolk". However the requirement is simply that they are obvious.
